I would use a oil suitable for the bike, and then use a break in additive, something like this one: http://www.cbperformance.com/product-p/3049.htm
I have just been through this with a chevy v8 and I am currently rebuilding a vb600, planning a hot cam, and I would definitely use an additive with zink, to prevent wear, not only in the brake in period, but also during "normal use"
